Lesson 01

Canning basics — acid, time, headspace, and the one rule that keeps you safe

Understand exactly which foods can be water-bath canned and which demand a pressure canner — this is the one lesson where guessing can put someone in the hospital.

Preserving starts in the garden, honestly — picking at peak ripeness and keeping tools and hands clean saves you headaches later. But the decision that actually matters for safety is acidity, and it's not negotiable, not a 'my grandmother always did it this way' kind of thing.

Clostridium botulinum spores are in garden soil, on your vegetables, basically everywhere. They're harmless in the open air. Seal them into a low-oxygen, low-acid, room-temperature jar and they can produce a toxin you cannot see, smell, or taste, and a few micrograms can kill you. That's not fearmongering, that's why the entire canning rulebook exists. High-acid foods — pH below 4.6 — keep the spores from germinating, so water-bath canning at 212°F is safe: pickles, jams, jellies, fruit, and tomatoes with added acid. Low-acid foods — green beans, corn, carrots, squash, meat, broth, any soup — must reach 240-250°F under pressure, because water-bath heat alone never gets hot enough to kill the spores.

Headspace isn't cosmetic. Too little and food boils out during processing and breaks the seal. Too much and trapped air stops a vacuum from forming. Use a tested recipe from the current USDA Complete Guide to Home Canning, the National Center for Home Food Preservation (NCHFP.uga.edu), the Ball Blue Book, or your state Extension service — and follow the exact headspace, jar size, and time listed. Don't improvise the acid level. Don't improvise the time. This is the one place in gardening where creativity is the wrong instinct.

Safety pH line

pH 4.6. Below it, water-bath works. At or above it, you need a pressure canner — no exceptions.

Pressure-canning target

240-250°F, held for the full time a tested recipe specifies, not a minute less.

High-acid examples

Berries, peaches, apples, pickles, jams, tomatoes with 1 Tbsp bottled lemon juice added per pint.

Low-acid examples

Green beans, corn, carrots, greens, meats, broths, soups, pureed squash — pressure canner only.

Do this

  • Get a tested recipe from USDA or NCHFP before you touch a jar. Write down the exact headspace, jar size, and processing time and don't deviate.
  • Check every jar for cracks and chips before use, and buy new two-piece lids every canning season — the sealing compound is single-use.
  • Label every jar with contents and date, use oldest stock first, and plan to eat home-canned food within a year for best quality, even though it may stay safe longer if sealed properly.

Watch out for

  • Changing vinegar ratios or adding extra low-acid vegetables to a tested pickle recipe. Less acid means real risk, not just a slightly different flavor.
  • Water-bath canning green beans or corn because the lid 'sealed fine.' A seal tells you nothing about whether the center of that jar got hot enough to kill spores.
  • Reusing screw-on lids from a store-bought jar of salsa. They were never designed for repeated home canning and fail more than people admit.

Lesson 02

Water-bath canning — jams, pickles, and acidified tomatoes

Put up jars of fruit, pickles, and tomato sauce with a $20 pot and a jar lifter, no special equipment required.

Water-bath canning is the gateway drug of preserving, and rightly so — the gear is cheap. You need a deep pot with a rack on the bottom (a folded kitchen towel works if you don't have a rack), a jar lifter, a lid wand or tongs, a wide-mouth funnel, and a bubble tool (a chopstick does the job). The water needs to sit 1-2 inches over the jar tops the whole time.

Heat jars in simmering water before filling so hot food doesn't crack cold glass. Heat lids per the manufacturer's instructions — most modern lids just need warm water, not a boil. Fill hot jars with hot food, leave the headspace the recipe specifies exactly, run the bubble tool around the inside to release trapped air, wipe the rim clean with a damp cloth (any residue there stops a seal from forming), center the lid, screw the band on fingertip-tight — meaning just snug, not cranked.

Process at a full rolling boil for the entire time listed, starting the clock only once the water returns to a boil after jars go in. Above 1,000 ft elevation you add processing time — the NCHFP altitude tables spell out exactly how much, usually 5 minutes per additional 1,000 ft for boil times under 20 minutes. When time's up, kill the heat, let the pot sit 5 minutes, then lift jars out and set them on a towel, untouched, for 12-24 hours. Check every seal the next day — the lid should be concave and should not flex when you press the center.

Minimum water depth

1-2 inches of boiling water above the jar tops throughout processing.

Headspace for jams/jellies

1/4 inch.

Headspace for pickles & tomatoes

1/2 inch.

Altitude adjustment

Add 5 min per 1,000 ft above 1,000 ft for boils under 20 min (check NCHFP tables for longer processes).

Do this

  • Try a first batch of berry jam using fruit, sugar, lemon juice, and a tested low-sugar pectin (Pomona's works well) if you want less sugar than the classic ratio. Process in half-pints.
  • Make one jar of dill pickles with a tested brine — roughly equal parts 5% vinegar and water, pickling salt, dill, garlic — never cut the vinegar to taste milder.
  • For tomatoes, add 1 Tbsp bottled lemon juice per pint (2 Tbsp per quart) or 1/4 tsp citric acid, even if the tomatoes taste plenty tart. Modern low-acid tomato varieties have pushed pH closer to the danger line than people expect.

Watch out for

  • Pouring hot jam into cold jars straight from the cupboard. Thermal shock cracks glass — keep jars warm until they're filled.
  • Cranking bands down tight. Air has to escape during processing for a vacuum to pull the lid down after. Fingertip-tight, that's it.
  • Crowding jars together while cooling. They need air circulating around them, and a bump during the first hour can pop a still-forming seal.

Lesson 03

Pressure canning — low-acid vegetables, beans, broth, and meat

Can the things water-bath canning simply cannot make safe: beans, corn, squash, stock, and stew, with the pressure and psi dialed in for your elevation.

A pressure canner is not a pressure cooker with a fancier name, and an Instant Pot 'canning' button is not approved by USDA or NCHFP for actual canning — it can't reliably hold pressure long enough or verify it. A real pressure canner is a heavy pot with a locking lid, a vent pipe, and either a weighted or dial gauge, built to hold 240-250°F, which is the temperature that reliably destroys botulism spores in low-acid food.

Check the canner before the season, every season. Replace the rubber gasket if it's cracked or won't seal. Make sure the vent pipe is clear of debris — a clogged vent is a genuine hazard. Get dial gauges tested for accuracy at your county Extension office every year; free in most counties, and a gauge reading off by even 1-2 psi can mean you've been underprocessing food without knowing it.

Process: add 2-3 inches of water to the canner, load jars on the rack, lock the lid, and vent steam for a full 10 minutes before closing the petcock or adding the weight — venting purges air that would otherwise throw off the internal temperature reading. Bring to pressure, then start timing only once you're at the target psi. A weighted-gauge canner runs 10 psi below 1,000 ft, 15 psi above. A dial-gauge canner runs 11 psi at 0-2,000 ft, and needs recalculating higher above that — check the NCHFP altitude chart, don't guess. When time's up, turn off the heat and let the canner depressurize on its own. Forcing it or opening early can cause liquid to siphon out of jars or, worse, cause a genuinely dangerous pressure release.

Weighted-gauge pressure

10 psi at 0-1,000 ft; 15 psi above 1,000 ft.

Dial-gauge pressure

11 psi at 0-2,000 ft; increases above that per NCHFP altitude tables.

Steam-vent time

10 minutes of steady venting before you start building pressure — do not skip this.

Cool-down rule

Let the canner return to zero psi naturally, then wait another 10 minutes before unlocking the lid.

Do this

  • Can one batch of dried beans: soak overnight, boil 30 min, pack hot into jars with fresh boiling water or broth, 1-inch headspace, process pints 75 min / quarts 90 min at 10 psi (adjust for altitude).
  • Can chicken or vegetable broth: strain, skim the fat (fat can interfere with the seal), reheat to a simmer, fill with 1-inch headspace, process per the tested time for broth (pints 20 min, quarts 25 min at 10 psi is typical, but check your specific recipe).
  • Keep a canning log: date, recipe source, jar size, psi, time, altitude, yield. If a jar ever looks or smells off later, this log tells you exactly what happened and lets you fix the process.

Watch out for

  • Canning mashed pumpkin, mashed squash, or pureed vegetables in general — their density blocks heat penetration to the center of the jar. Only chunks in approved liquid are tested safe.
  • Opening the canner the second the gauge hits zero. Wait the additional 10 minutes so jar contents settle and don't siphon liquid out when you unlock the lid.
  • Ignoring your actual elevation. A recipe tested at sea level and run unchanged at 4,500 ft is genuinely underprocessed.

Lesson 04

Fermentation & pickling — kraut, kimchi, and lacto pickles

Turn raw produce into tangy, probiotic-rich food using nothing but salt, water, and time — no heat, no canner, no fear of botulism if you keep the salt percentage right.

Lacto-fermentation is one of the oldest preservation tricks there is. Submerge vegetables in a salt brine and you create conditions where Lactobacillus bacteria — already living on the vegetable's surface — thrive while spoilage organisms and pathogens can't compete. The payoff is sauerkraut, kimchi, lacto-pickles, and hot sauce that keeps in the fridge for months and tastes better for it.

Salt percentage is the whole safety mechanism here, and it's simple math: 2-3.5% salt by combined weight of vegetables and any added water. Weigh everything on a kitchen scale — for 1,000g of cabbage and water combined, that's 20-35g of salt. Too little salt and mold or worse gets a foothold. Too much and fermentation stalls out entirely and you just get salty vegetables. Use pickling or kosher salt without iodine or anti-caking additives; those additives can cloud the brine and slow the ferment.

Keep everything submerged below the brine line, always. Oxygen at the surface is where mold starts. A fermentation weight, a whole cabbage leaf tucked over the shreds, or a small water-filled jar nested inside the crock all work. A thin white film (kahm yeast) is harmless — skim it off. Fuzzy colored mold, or a smell that's actually putrid rather than sour and funky, means something went wrong: toss it, wash the jar well, and start over with a fresh batch and cleaner technique.

Standard salt brine

2-3.5% by total combined weight of vegetables and water — weigh it, don't eyeball it.

Active ferment time

3-10 days at room temperature; longer and cooler gives more complex flavor, faster and warmer gives faster sour.

Storage after fermenting

Move to the fridge once it tastes sour enough for you; it will keep for several months, slowly mellowing.

Temperature sweet spot

65-72°F. Below 60°F ferments crawl; above 75°F they can go soft and slimy fast.

Do this

  • Make your first sauerkraut: shred one medium cabbage (about 2 lbs), weigh it, add 1.5-2% of that weight in salt, massage until it releases its own brine, pack tight into a jar under the liquid, weight it down, cover loosely so gas can escape. Taste starting day 3.
  • Try a small batch of lacto-pickles: cucumbers, garlic, dill, black pepper, mustard seed, submerged in a 2.5% salt brine. Ferment 5-7 days at room temp, then refrigerate.
  • Save the leftover brine once the pickles are gone — it's salty, sour, and alive. Use it in salad dressing, a marinade, or as a flavor boost for the next batch's starting brine.

Watch out for

  • Filling a jar to the rim. Fermentation makes CO2, and it needs somewhere to go or you'll get brine all over your counter, or a broken jar.
  • Canning fermented pickles afterward to make them 'shelf stable.' That heat kills every living culture you just spent a week growing. If you want shelf-stable pickles, make a straight vinegar pickle from the start instead.
  • Using iodized table salt. The iodine and anti-caking agents can discolor vegetables and slow or stall fermentation.

Lesson 05

Dehydrating, freezing, and the Harvesteader's stash plan

Match the right preservation method to each crop, with real dehydrator temps and the dryness tests that actually work, so nothing goes moldy in the pantry six weeks later.

Not everything belongs in a jar. Dehydrating shrinks storage space and concentrates flavor — dried tomatoes taste like candy compared to fresh. Freezing halts enzyme activity cold and keeps texture closest to fresh for things you'll cook anyway. Root cellaring just keeps living things alive and dormant. Matching the crop to the right method, instead of defaulting to whichever gadget you own, is most of the skill.

Dry herbs at 95-115°F, fruit at 125-135°F, and vegetables at 125-145°F — vegetables run hotter because they need to dry fast enough to avoid spoiling before the water's gone. Slice everything the same thickness so pieces finish together instead of some scorching while others stay damp. Blanch vegetables first (2-5 minutes in boiling water, then an ice bath) to stop enzyme activity and hold color; skip this step and green beans turn a sad khaki. The real dryness test: herbs should crumble to powder between your fingers, fruit should be leathery with zero sticky spots, vegetables should be brittle enough to snap. Condition dried food for 4-7 days in a loosely covered jar, shaking daily to redistribute any hidden moisture pockets, before sealing it away long-term. This catches the pieces that seemed dry but weren't, before they mold the whole batch.

Freeze vegetables in a single layer on a sheet pan first, then bag once solid, so they don't clump into a single frozen brick. Push out as much air as you can from the bag — a straw works if you don't have a vacuum sealer. Label with contents and date; most vegetables hold peak quality 8-12 months in a standard freezer, longer in a deep freeze. Fruit freezes well on trays too; toss berries with a spoonful of sugar first if you want them to hold their shape once thawed instead of turning to mush.

Herb drying temp

95-115°F until crumbly and dry to the core, usually 1-4 hours in a dehydrator.

Fruit drying temp

125-135°F until leathery with no sticky or tacky spots, often 6-12 hours depending on thickness.

Vegetable drying temp

125-145°F, blanched first, until brittle — snaps rather than bends.

Freezer quality window

8-12 months for most vegetables in a standard freezer; use oldest first, it's still safe after but quality drops.

Do this

  • Dry a full basket of herbs — basil, oregano, thyme, parsley — and store in glass jars away from light. They'll smell sharper than anything you can buy in December.
  • Freeze tomato paste in 1-Tbsp scoops on parchment, then bag once frozen. Drop a puck into winter soups and sauces without thawing a whole jar.
  • Build a preserving plan at harvest time before you're overwhelmed: tomatoes to sauce (canned), berries to jam (canned), summer squash to frozen chunks, green beans to pressure canned or frozen, herbs to dried.

Watch out for

  • Drying too hot too fast so the outside seals while the inside stays damp — 'case hardening.' That trapped moisture molds in storage weeks later, hidden inside a piece that looks perfectly dry.
  • Freezing vegetables raw without blanching. They go limp, discolored, and flavorless within a month or two — the enzymes never stopped working.
  • Storing dried food in a sunny cupboard over the stove. Heat and light both degrade flavor and color fast — cool, dark, and dry, always.

Lesson 06

Root cellars, cold rooms, and winter storage crops

Keep potatoes, onions, squash, and apples fresh for months by matching each crop's actual temperature and humidity target — most root cellar failures are just a mismatch.

Some crops store themselves if you give them what they want. A root cellar doesn't have to be a dug-out basement under a hill — a closet on an uninsulated exterior wall, an unheated garage corner boxed in with insulation, a spare fridge's crisper drawer, or a buried five-gallon bucket with a loose lid can all work, depending on the crop and your climate.

Potatoes want 38-40°F, high humidity, and complete darkness — light greens the skin and produces solanine, which is genuinely toxic in quantity, so store them somewhere pitch black. Onions and garlic want the opposite: cool and dry, 32-40°F with only 50-60% humidity and real airflow so the necks stay cured instead of going soft. Winter squash wants 50-55°F and 50-70% humidity — cooler than that and you get chilling injury (sunken soft spots), warmer and it just breaks down faster. Apples like 30-35°F and high humidity, but keep them away from everything else — they release ethylene gas that makes carrots turn bitter and potatoes sprout early.

For carrots, beets, and turnips, a simple sand-and-bucket setup works well: layer roots in damp — not wet — sand inside a bucket, lid on loosely for airflow, kept somewhere cool. Check monthly and pull anything that's gone soft before it takes its neighbors down with it.

Potatoes

38-40°F, 90-95% humidity, total darkness.

Onions & garlic

32-40°F, 50-60% humidity, good airflow, dry conditions.

Winter squash

50-55°F, 50-70% humidity, cured before storage.

Apples

30-35°F, ~90% humidity, stored well away from vegetables.

Do this

  • Put a cheap thermometer/hygrometer in whatever spot you're using for storage. You cannot manage a temperature you're not actually tracking.
  • Cure winter squash and sweet potatoes before storage: a warm room (around 80°F) with good airflow for 10 days hardens the skin and heals any nicks from harvest.
  • Check stored crops every 2-4 weeks without fail. One soft potato or leaking apple releases moisture and ethylene that speeds up rot in everything nearby.

Watch out for

  • Storing onions and potatoes in the same bin. Onions give off moisture and gas that shortens potato storage life significantly.
  • Skipping the cure on winter squash. Uncured skin lets rot organisms in within weeks instead of months.
  • Burying roots in sand that's actually wet, not just damp. Standing water rots the crop from the outside in — squeeze the sand; it should hold shape but not drip.
