Where to get seeds and starts

Source seeds that actually germinate and actually fit your season, without blowing $80 on a catalog binge in January.

The prettiest catalog is not the best catalog. A variety bred and trialed hundreds of miles away can carry a "days to maturity" number that simply does not hold in another climate, and the seed is not at fault; it was selected under different heat, daylength, and disease pressure. The strongest seed supply is almost never one company. It is a mix: a catalog for volume, a local nursery for the two or three crops that are hard to raise indoors, and a swap or a neighbor for whatever has already proven itself on your street.

For heirlooms and regional stuff, Baker Creek Heirloom Seeds, Seed Savers Exchange, Southern Exposure Seed Exchange, and Fedco all do good work. If you're north and short-season, High Mowing Organic Seeds and Johnny's Selected Seeds run trials in Vermont and Maine, so their days-to-maturity numbers are honest for cold country. Native Seeds/SEARCH carries Indigenous and Southwest-adapted varieties you won't find anywhere else. Worth a look even if you're not in the desert, because their drought tolerance work is just good genetics.

Don't sleep on the boring options. Feed and farm-supply stores stock regional favorites cheap, no shipping, no fuss. Seed libraries let you borrow for free and pay it back with saved seed later. Most county library systems have one now. And a Master Gardener plant sale in May will hand you a tomato variety that's been surviving your county's blight and heat for a decade, for two bucks a start.

Seed catalog cutoff

Order by early-to-mid January. Popular tomatoes and peppers sell out of specific varieties by February most years.

Nursery start bonus

Worth the markup for tomatoes, peppers, and brassicas if you have no grow light setup.

Local-adaptation edge

Saved or swapped seed from your own zip code routinely outperforms catalog stock after 3-4 seasons.

Seed viability by family

Onions/parsnips 1 yr, carrots/peppers 2-3 yrs, beans/peas/brassicas 3-4 yrs, tomatoes/cucumbers/lettuce 4-6 yrs. Cool dark storage, all bets off if it got humid once.

Do this

  • Sign up for three catalog mailing lists now: one regional, one heirloom specialist (Baker Creek or Seed Savers), one organic staple house (Johnny's or High Mowing).
  • Find a seed swap or seed library near you this winter and actually put the date on the calendar. These things happen once and you'll miss it if it's not written down.
  • Ask three neighbors who garden what they save every year. Free trial data, better than any catalog description.

Watch out for

  • Buying the whole order off a big-box discount rack in April. Seed viability drops fastest in heat and humidity, and those racks often sit through a warm winter in storage before they ship. Clearance seed that should germinate near 90% can come in far lower, and a weak stand costs a whole planting window.
  • Picking varieties off the photo alone. Match days-to-maturity against your actual frost dates or you'll be harvesting green tomatoes in October, again.
  • Assuming a nursery start is untreated. Some are drenched with systemic neonicotinoids before they hit the shelf. Ask, or grow your own from seed if pollinator safety matters to you.

Lesson 02

How to read a seed packet

Decode germination temperature, days to maturity, and seeds-per-gram math so the packet stops lying to you by omission.

A seed packet is a tiny instruction manual that most people never actually read past the front. The front sells you the fantasy. The back has the number that matters: days to maturity. For direct-sown crops that's sowing to harvest. For anything transplanted (tomatoes, peppers, eggplant) it's transplant to harvest, so tack on another 5-8 weeks of indoor growing before that clock even starts.

Germination temperature means soil temperature, not air temperature, and that distinction ends more spring plantings than frost does. Lettuce germinates fine at 40°F soil. Beans want 60-70°F minimum or the seed rots in the ground before it sprouts, which is why a row of cold-soil beans often comes up as scattered blanks. Tomatoes and peppers germinate fastest at 75-85°F, which is why a heat mat under the tray matters more than any grow light. A soil thermometer costs about $12 and settles the question in one reading.

Seed count math matters more than gardeners think. A gram of lettuce seed is roughly 800-1,000 seeds; a gram of tomato seed is closer to 300; a gram of beans is maybe 3-5 seeds because they're huge. If a packet says 80% germination and 100 seeds, expect about 80 usable plants, sow 2-3 per hole, and thin hard. Thinning is not optional. Crowded seedlings compete for light, get leggy, and rot at the base from poor airflow. Depth is non-negotiable too: bury a lettuce seed a half inch and it'll never see daylight, it just runs out of stored energy underground.

Depth rule of thumb

2-3 times the seed's own diameter. Lettuce and carrots barely covered; beans and corn go 1-1.5 inches.

Germination temps by crop

Lettuce/spinach 40-75°F, peas 45-75°F, carrots/beets 50-85°F, beans/squash 60-95°F, tomatoes/peppers 70-90°F (fastest near 85°F).

Seeds per gram (rough)

Lettuce ~800-1,000, tomato ~300, pepper ~150-200, cucumber ~30, beans ~3-5, corn ~3-4.

Packet date

Check 'packed for' year. A 2-year-old packet often still germinates, just weaker and slower: sow thicker to compensate.

Do this

  • Build a spreadsheet: variety, days to maturity, direct-sow or transplant, start date counting backward from last frost, and a fall succession date.
  • Buy a soil thermometer. Push it 2 inches down before sowing anything in spring: trust the number, not the calendar.
  • Save empty packets in a binder with the year written on the front. Two seasons from now you'll want to know exactly what you grew and how it did.

Watch out for

  • Ignoring 'start indoors 6-8 weeks before last frost' and direct-sowing peppers outside in a 100-day season. They simply won't finish.
  • Sowing beans and squash into cold, wet April soil because the calendar says it's planting time. Wait for the soil, not the date.
  • Skipping thinning because pulling a seedling feels wasteful. One strong plant beats three stunted, disease-prone ones every time.

Lesson 03

Heirloom, hybrid, open-pollinated, and GMO

Understand what each seed label actually means, so the choice reflects your values on food safety, seed sovereignty, and what you want to be able to save.

Open-pollinated means the plant is pollinated naturally (bees, wind, or itself) and its offspring resemble the parent. Heirloom is a cultural label stacked on top of that: an open-pollinated variety passed down, usually 50 years or more, often carrying a family or place name. 'Mortgage Lifter' has a story. So does 'Cherokee Purple.' The flavor can be extraordinary. The disease resistance often is not, because these lines were selected for taste and keeping in a household, not for blight resistance in a monoculture.

Hybrid seed (F1) comes from deliberately crossing two distinct parent lines to combine their traits: vigor, uniformity, disease resistance. Hybrid seed can be saved, but the next generation will not breed true; it segregates back toward the grandparents in unpredictable ways. Where seed saving and seed sovereignty are the goal, open-pollinated and heirloom varieties are the ones that keep that door open, and every packet saved is one less line of your food supply that depends on a company still stocking it.

Genetically engineered (GE, commonly called GMO) seed has DNA altered through laboratory techniques rather than breeding. In the US, GE varieties dominate commodity corn, soy, cotton, canola, and sugar beet, and there is no federal requirement that seed be labeled as engineered (Center for Food Safety; NC State Extension). Home garden vegetable seed has historically been almost entirely conventional, but that is changing: the GE Purple Tomato from Norfolk Plant Sciences was released directly to US home gardeners in 2024. So the honest position is not "stop worrying" but "know what you are buying." If avoiding engineered seed matters to you, buy certified organic (which excludes GE by regulation), buy from a company listed on the Safe Seed Pledge database, or grow from seed you saved yourself. Those are real, verifiable safeguards, and choosing them is a legitimate decision about your own food, not a hedge against an imaginary risk.

Two things worth caring about regardless of that debate. First, seed treatments: much conventional seed is coated with fungicides or insecticides, and some nursery starts are drenched with systemic neonicotinoids that persist in pollen and nectar. Treated seed is usually dyed a bright pink, blue, or green, and the packet or bin tag names the product. Untreated and organic seed avoid it entirely. Second, provenance: knowing who bred and grew your seed, under what conditions, and whether the people who did it were paid fairly is part of ethical sourcing, and small regional houses and Indigenous-led seed keepers are usually the ones who will tell you.

Open-pollinated

Breeds true, adapts to your garden's specific conditions over repeated seasons of saving.

Hybrid F1

Uniform and often disease-resistant out of the packet, but saved seed is a genetic lottery ticket.

Heirloom

Open-pollinated plus at least 50 years of documented history, usually pre-dating widespread hybrid breeding.

Engineered (GE/GMO) seed

Rare but no longer absent from home garden catalogs; the GE Purple Tomato reached US home gardeners in 2024. Certified organic excludes GE by regulation, and US seed carries no GE labeling requirement.

Treated seed

Fungicide- or insecticide-coated seed is typically dyed bright pink, blue, or green and named on the tag. Untreated and organic seed skip it.

Do this

  • Start seed saving with one or two self-pollinating crops: beans, peas, lettuce, or tomatoes. Easiest wins, least isolation work.
  • Use hybrids where local disease pressure is severe. Hybrid tomatoes and cucumbers bred for verticillium and mosaic resistance can carry a season that heirlooms would lose.
  • Decide your own sourcing standard and write it down: certified organic, Safe Seed Pledge listed, untreated only, or saved-on-site. Then buy to that standard instead of re-deciding at every catalog.
  • Ask a nursery whether starts were treated with a systemic insecticide before you buy, especially if you keep bees or want the flowers working for pollinators.

Watch out for

  • Assuming heirloom means easy. Many heirloom tomatoes crack, split, and succumb to blight faster than a modern hybrid: remarkable flavor, more work.
  • Saving hybrid seed expecting identical fruit next year. Treat it as an experiment, not a plan to count on.
  • Treating a label as a guarantee without checking it. "Natural" and "non-GMO" claims are unregulated on seed; certified organic and a company's published pledge listing are the claims that can actually be verified.

Lesson 04

Starting seeds indoors

Grow stocky, dark-green transplants with a cheap shop light instead of the pale, leggy stuff a window sill produces every time.

Starting indoors buys you season length and lets you grow varieties no nursery stocks. The number one failure is light. A south window looks bright to your eyes but it's a fraction of what a seedling needs, and they'll stretch toward it, going thin and weak within a week. A basic LED or fluorescent shop light, $30 at a hardware store, hung 2-4 inches above the leaves and run 14-16 hours a day beats any window, full stop.

Use seed-starting mix, not garden soil and not straight potting soil either. Garden soil compacts in cells, may carry disease, and comes loaded with weed seed. Seed mix is light, sterile-ish, and holds even moisture. Bottom-water by setting trays in a shallow pan so you don't blast tiny seeds sideways, and hold off on fertilizer until the first true leaves show. The seed itself carries enough food until then.

Damping-off is the seedling killer nobody warns you about early enough: a fungal rot that collapses stems right at the soil line overnight, usually from overwatering, poor airflow, and cool soggy mix. Prevention beats cure. Use fresh sterile mix, don't overwater, run a small fan for airflow, and don't crowd trays. Timing: tomatoes and peppers 6-8 weeks before last frost, brassicas and onions 8-10 weeks, squash and cucumbers only 3-4 weeks because they hate root disturbance and will sulk if held too long. Harden off before transplanting. An hour outside in shade the first day, building to a full day of sun and wind over 7-10 days, or you'll watch the leaves bleach and burn within hours of planting out.

Light distance

2-4 inches above the leaf tops; raise the light (or lower the tray) as they grow so they never stretch.

Daily light hours

14-16 hours on, 6-8 hours of real darkness: seedlings need the dark cycle too.

Germination heat by crop

Tomatoes/peppers 75-85°F (heat mat helps a lot), brassicas/lettuce 60-70°F, onions 65-75°F.

Harden-off duration

7-10 days minimum, longer if a cold snap hits mid-process, just restart the clock.

Do this

  • Set up one light shelf plus a heat mat if your house runs cool. The heat mat is what gets peppers up in 7 days instead of 21.
  • Sow 2-3 seeds per cell, thin to the strongest single seedling with scissors at the soil line once true leaves appear. Don't yank, you'll disturb the survivor's roots.
  • Label every tray with variety and sowing date on masking tape. By week three of spring chaos, unlabeled trays are just mystery seedlings.

Watch out for

  • Starting too early because waiting feels unproductive. Six-week-old, root-bound tomato starts underperform fresh 4-week starts almost every time.
  • Overwatering out of anxiety. Damping-off kills more seedlings than underwatering ever will. Let the mix surface dry slightly between waterings.
  • Skipping hardening off because you're excited to plant. A tender indoor leaf in full May sun for six hours straight will scorch white by evening.

Lesson 05

Direct sowing in the garden

Know exactly when soil temperature, not the calendar, says go, for the crops that hate being transplanted.

Root crops especially resent transplanting: carrots, radishes, beets, and turnips grow a taproot that forks and stunts if disturbed even once, so they go straight into the ground or not at all. Beans, corn, squash, cucumbers, peas, and most greens also do fine or better sown directly. Save your trays for the crops that actually need the head start.

Soil prep is the real lever. Loose, crumbly soil (the texture of chocolate cake crumbs, no clods) lets a hypocotyl push through without wasting energy. Clear rocks and thick mulch off the seedbed surface until plants are up and growing; mulch is for after emergence, not before. Press big seed like beans and squash firmly into contact with soil, but don't pack the surface into a crust or it'll seal against water and air both.

Go by soil temperature, and succession-sow instead of emptying the whole packet at once. A smaller planting every 1-3 weeks keeps lettuce and beans coming steadily instead of one glut nobody can eat fast enough followed by three empty weeks. Mark rows clearly with a stake and string: an unmarked seedbed is easy to hoe through before the crop emerges, and slow germinators like carrots and parsnips are the usual casualties.

Cool-weather direct sow (soil 40-60°F)

Peas, lettuce, spinach, kale, carrots, radishes, beets.

Warm-weather direct sow (soil 65-85°F)

Beans, corn, squash, cucumbers, melons, basil, okra.

Succession interval

Lettuce and radish every 2 weeks; bush beans every 3 weeks through midsummer.

Germination watch window

Keep the seedbed surface evenly moist, a light daily watering if it's dry, until sprouts break the surface, then ease off.

Do this

  • Direct-sow your first radish and lettuce mix two to four weeks before your last frost date. They don't mind a light frost once up.
  • Wait to plant beans until soil holds above 60°F for several consecutive days. Cold wet ground rots the seed before it sprouts.
  • Lay floating row cover over a freshly sown bed to hold soil moisture, add a few degrees of warmth, and block early flea beetles.

Watch out for

  • Burying small seed too deep. The rule holds: the smaller the seed, the shallower it goes. Carrot seed barely gets covered at all.
  • Letting the seedbed crust over and dry during germination. A single missed watering day in a dry spring can end a whole planting.
  • Sowing the entire packet in one go. Spread it over weeks and you get a season of harvest instead of one week of overwhelm and rot.

Lesson 06

Saving seeds from your garden

Save clean, viable seed with the right isolation distance and the wet-versus-dry method for your crop, so next year's plants are actually better.

Seed saving closes the loop. A plant grown and saved on your own ground adapts, generation over generation, to your specific soil, pests, and weather quirks. It also means you're not re-buying the same packet every spring. Start with self-pollinating crops that have big, easy seed: beans, peas, lettuce, and tomatoes forgive beginner mistakes.

Choose your seed parents deliberately. Save from the earliest, healthiest, best-tasting plant in the row, never the runt that happened to have extra seed left over. Cross-pollinating crops need real isolation or hand-pollination: squash varieties will cross with each other within a quarter mile if bees are working both, corn crosses via wind over even longer distances, and brassicas (all of which are one species, Brassica oleracea, for cabbage/kale/broccoli/brussels sprouts) cross with abandon. Self-pollinators like beans and tomatoes need far less. A few feet of separation and maybe a floating row cover during flower if you're precise about purity.

Wet-seeded crops: tomatoes, cucumbers, melons. Carry a gel sac around the seed that both inhibits germination and can harbor seed-borne disease, so they need fermentation. Scoop pulp and seed into a jar with a splash of water, let it sit 2-3 days at 70-80°F, stirring once daily; a layer of mold on top is normal and means it's working. Rinse in a strainer until the seed feels gritty clean, then dry on a coffee filter or screen, not paper towel which glues to the seed. Dry-seeded crops: beans, peas, lettuce, brassicas, just finish drying on the plant, then get shelled or threshed and dried further indoors. Either way, finished seed should snap when bent, not fold, before it goes in an airtight jar in a cool dark place. A spoonful of dry rice or a silica packet in the jar keeps ambient humidity from creeping in.

Easy seed-saving crops

Tomatoes, beans, peas, lettuce, peppers. All self-pollinating, minimal isolation needed.

Isolation distance

Self-pollinators: a few feet. Squash/cucumbers: 800 ft-1/2 mile between varieties. Corn: 1/2 mile+ or hand-bagged tassels. Brassicas: up to a mile, same species crosses freely.

Tomato/cucumber fermentation

2-3 days at 70-80°F in a small amount of water, stir daily, rinse when pulp separates from seed.

Seed viability by family

Tomatoes/lettuce/brassicas 4-6 yrs; beans/peas/squash 3-4 yrs; onions/leeks/parsnips 1 yr only: buy those fresh every year.

Do this

  • This season, save seed from one easy crop. Let a few bean pods dry brown and rattly on the plant, then shell them onto a plate for a week before jarring.
  • Keep a seed-saving notebook: variety, source plant, harvest date, isolation method, and how well it germinated the following spring.
  • Store saved seed in labeled glass jars in a closet or the fridge door, never in a hot shed, garage, or sunny windowsill where heat cycles kill viability fast.

Watch out for

  • Saving from hybrids and expecting the parent's fruit again. It's an interesting experiment, never a reliable plan.
  • Jarring seed that isn't fully dry. Even seed that feels dry to the touch can mold from residual moisture inside: give it an extra week.
  • Saving from a diseased plant because it still produced fruit. Tomato and squash seed can carry bacterial canker and viral disease into next year's crop.
